    Cucumber Cups and Spicy Peanut Butter

    For my Nigerian followers, this appetizer is very reminiscent of the green garden eggs and groundnuts version we have. I chose to switch things up a bit with it and add a few spices to my peanut butter to make it more interesting. I incorporated african nutmeg otherwise known as ehuru into my peanut butter blend but if you do not have access to the spice I used, you can play with other spices or even regular nutmeg to make it more interesting. This is also a very healthy snack option for people on the fitfam journey this holiday. If you want to stay away from the regular junk food, you can incorporate these into your appetizer offerings but remember to go easy on the peanut butter as that still has its fattening properties.

    Recipe for Cucumber Cups and Spicy Peanut Butter

    Ingredients

    1 medium piece of Cucumber

    3/4 cup of peanuts

    1 scotch bonnet pepper

    2 tablespoons of water

    1 piece of ehuru (african nutmeg) – slightly roasted

    Method

    Chop the cucumber into little round circles with about 1/4 thickness. You can choose to be creative with the cucumber pieces and make incisions on the skin as I have done or leave as is.

    Deseed the cucumber from the center and set aside.

    In a blender or food processor, blend the peanuts with the pepper, water and ehuru will a smooth paste is achieved. (If you do not feel it is spicy enough, you may wish to add more pepper.

    Scoop the peanut butter unto the cucumber cups and serve as is.
