• Chicken in White Sauce and Rice


    First of all to those celebrating, Happy Easter from Afrolems. Let’s keep in mind the message behind the holiday. For a lot of people, you may have given up chicken during the Lent period and possibly even this weekend, you may have just been restricted to Fish. Here is a yummy chicken in white sauce recipe that would launch you back into your chicken consumption. One of our fans on Facebook asked for this recipe and at first I was wondering what white sauce was but then it occurred it was this creamy sauce that people use on pasta or as a sauce for rice. The plain version of this recipe uses regular milk but I used coconut milk (I know i know, coconut will soon grow on my head). I also tried to make it have a Nigerian flavour undertone by using crayfish powder as part of my seasoning. If you do not have an oven, you can boil your chicken and plop it into the sauce instead. Hope you enjoy it.

    Recipe for Chicken in White Sauce and Rice

    Ingredients (Serves 3-4)

    4 Chicken breasts

    4 Tablespoons butter/Margarine – Preferably butter

    1.5 cups of coconut milk (or regular milk)

    1 tablespoon corn starch

    2 handfuls of chopped carrots

    2 handfuls of chopped red bell pepper

    1 handful of chopped spring onions

    1 handful of chopped green beans

    1 clove of Garlic

    2 teaspoons of dry pepper (chilli powder)

    Seasoning cubes

    1 tablespoon of crayfish powder

    Salt

    Method

    Season your chicken with salt, 1 teaspoon of dry pepper, seasoning cubes, chopped garlic and 2 tablespoons of butter and bake in the oven for 20-25 minutes at 350F. To ensure the chicken is cooked, make an incision in the middle of the chicken to check if its red. Then if not, its cooked. If you are boiling your chicken, just season and boil and set aside.

    In a pot on low-medium heat, pour in your milk, corn starch, remaining butter, and all your seasoning. Keep stirring the sauce so it does not over-thicken. Add your vegetables and stir in. If you are adding your boiled chicken, add it at this stage as well or you can serve it on the side.

    The sauce should be slightly thick not all the way. If it thickens too fast, add more water and stir. The whole process of cooking the sauce should take just 5-8 minutes.

    Serve with white rice.

      Thanks for the recipe. Just tried it and it’s fabulous. My daughter who hates coconut milk and swore not to taste it. She is currently sitting with a bowl of the sauce.
      My tip is for the people like me who always end up having lumps in whatever they mix, I ended up pouring the sauce into the blender to smoothen it out before adding the vegetables and turkey (used turkey instead). Wld send you a picture via Instagram.

      Tried out this recipe on Sunday and it was so yummy,
      I remember making an Indian version of this a while back, Coconut Fish Curry, So decided to add a twist to your recipe. I love food fusion so i first of all used natural coconut and extracted the milk, then for the white rice, decided i wanted an Indian twist to the rice by boiling with coconut milk, black cardamon and some parsley. For the sauce middle eastern by spicing my turkey with cumin, cinnamon, ginger n garlic.

      Thanks for your recipes. I tried d grill fish last wkend, it was great. Pls is corn flour same as “ogi or akamu”? and can we use potatoes instead? Thanks again

        ogi is fermented so you would not want to use that. You can use potatoes to thicken it as well 🙂

      Hi, just stumbled on your site and I’m taken already. I’d like to leave flour out of this recipe, is it possible, can I use Irish potatoes instead, do I need to mash them?

        Hello Jumai, you can absolutely use potatoes to thicken. You can use mashed or just drop it in to boil with your sauce and mash as the sauce simmers to thicken it. Hope you enjoy it.

        Hello Matilda, already made coconut milk is sold in stores but you can also make some yourself using my recipe for coconut milk with regards the corn starch, you can buy already powdered corn starch or use flour as a substitute or potatoes. The purpose of the corn starch is to thicken the sauce but flour or potatoes can also do the trick.

        you can use cream if you are completely allergic to dairy then you should use more butter and flour
