• Gin and Tonic Puff Puff

    This gin and tonic puff puff recipe has been a long time coming. I played around with the idea two years ago when I started my puff puff series and only got to execute it this year. I was worried about the outcome because I needed to have access to a good gin liqueur or at least a very syrupy gin.

    The best way to retain the flavour of the gin and tonic is not to include it in the batter of the puff puff but instead to make it as a side syrup to drizzle over the puff puff. The acidity of the gin and tonic may not go well with the puff puff batter anyway so this is probably the best way to go.

    This puff puff can be topped with candied lemons or candied oranges or something crunchy to cut through the sweetness. You can also go the route of adding rosemary or thyme to your syrup for a fragrant version of your gin and tonic puff puff. Enjoy this gin and tonic puff puff with friends as I believe it is way too decadent to enjoy by yourself.

    RECIPE FOR GIN AND TONIC PUFF PUFF

    Ingredients (Serves 1-2)

    Gin and Tonic Syrup

    33 cl tonic

    180g icing sugar

    60ml Gin

    Puff Puff 

    1 cup flour

    1/2 cup warm water

    1.25 tsp yeast

    15g sugar

    Pinch salt

    Oil for deep frying

    Method for Gin and Tonic Puff Puff

    Mix the tonic water, icing sugar and gin in a pot and bring to boil until the mixture is as thick as a syrup and begins to bubble up. Take it off the heat and allow it to cool.

    In a bowl, mix your flour, sugar, salt, yeast and warm water. Mix the ingredients and set aside to rise. Once it is risen, heat up your oil on low to medium heat and fry little balls of puff puff. 

    Serve with the gin and tonic syrup.
