• PASTA SALAD RECIPE

    On my list of decadent salads, pasta salad is high on top of that list. Potato salad comes really close depending on the content of the salad but for the purpose of this post, this pasta salad is it. Think of your pasta salad as a blank canvas and you can add any toppings you like. I chose quail eggs as my main protein for this. In taste, it doesn’t differ that much from regular eggs but in nutrient content, those little suckers are packed with nutrients. One thing I really wanted to add to this salad was olives but unfortunately I had run out so that could be another option. If you find this recipe in Nigerian pear season, please boil some and peel the flesh into the salad, it will add a dimension of flavour you least expect but will be happy about. If you also love nuts in salads or even raisins, feel free to be slightly more explorative with it. I guarantee this would be your go to decadent salad.     RECIPE FOR PASTA SALAD

    3/4 cup Pasta (Macaroni or Penne)

    5 Cherry Tomatoes

    2 Quail Eggs

    A handful of Chopped Onions

    A handful of Chopped Green Pepper

    2 Tablespoons of Shredded Cheddar Cheese

    1 Teaspoon of Salt

    1 Teaspoon Black Pepper

    Parsley Garnish

    Method

    In a pot with two cups of boiling water, add your pasta and bring to boil till soft. Rinse in cold water and set aside. Bring your quail eggs to boil, peel and set aside. In a bowl, mix your pasta, chopped cherry tomatoes, onions, green pepper, black pepper and cut quail eggs. Top with shredded cheese and garnish with any dressing of your choice.
