I was on set a few weeks ago with a brand I work with often. Sympli Foods and we were shooting loaded yam fries. Here I was thinking I had already blogged about it. Alas, I was wrong. i have made this for a few friends and I keep getting requests to make it again. I made it this weekend on my Instagram live and I definitely got positive reviews about it. My mum that is super critical about food had to restrain herself. She kept saying,

There is an element of sweetness but there is intense savoury from the cheese especially. I however need to warn you that the combination of yam and cheese is a knockout plan. If you thought yam gave you itis, well imagine combining yam and cheese. Instant sleep medication. I have a different recipe that combines yam and cheese but this one includes a lot more protein and you have the choice to swap the protein options. I used snails and prawns but you can use anything from asun to fish. Here is hoping you enjoy this recipe, please come back and share success stories of this recipe. Recipe for Loaded Yam Fries
Ingredients
500g of Sliced Yam
2 snails
6 Prawns
A Green Bell Pepper
1 Red Bell Pepper
1 Red Onion
2 Seasoning cubes
1 teaspoon of Dry Pepper
A teaspoon of Black Pepper
1 tablespoon of salt
2 cooking spoons of Vegetable Oil
3 Scotch Bonnet Pepper
1/4 cup of Cheddar Cheese
1.5 tablespoons of Salad Cream
1.5 tablespoons of Ketchup
Method
Chop your bell peppers and onions and set aside.
Season your snail with one seasoning cube, dry pepper, a handful of onions and 1/2 tablespoon of salt and boil till soft.
Chop into little pieces and set aside.
In a pan, heat up your oil, stir fry your onions and chopped prawns, season with seasoning cube, black pepper and stir fry for about 3 minutes.
Pour in your chopped vegetables and snails and stir and allow to fry for 2 minutes and set aside.
Salt your yam and deep fry till cooked inside and brown which should take 5 – 7 minutes depending on the temperature. I recommend medium to high.
Strain your yam of the excess oil and place in a baking pan with parchment paper.
Scoop your stir fry onto the yam, top with your shredded cheese and pop in the oven(275F) for about 2 – 3 minutes.
Mix your salad cream and ketchup and drizzle over the loaded yam fries.
Garnish with shredded parsley or spring onions and serve hot.
