I had a few guy friends at my house when I was making this Guinness stout chicken wings for fathers day. I told them I was about to grill some chicken wings and they were excited and then I said I was using stout for the glaze and then their true reactions came through.
“Ohhhhh Afrolems you have started again. Why can’t you just do simple recipes.”
Unfortunately, my friends are stuck with my experiments, good or bad. This isn’t even that experimental in my opinion as I have seen many people use stout in cooking meats. I had made this recipe for fathers day as a treat to my dad when he arrived from his trip and I can say he thoroughly enjoyed it and so did my friends. The recipe is easy and you can tweak as you please. If you do not have a grill, opt for using your oven. If that’s not available to you, fry your chicken and coat with your glaze. Adjust and tweak this recipe till you get your desired result.
Recipe for Guinness Stout Chicken Wings
Ingredients
10 – 12 pieces of Chicken Wings
Brine
2 Tablespoons of Soy Sauce
3 Tablespoons of Honey
7 Pieces of Garlic
3 Pieces of Scotch Bonnet Pepper
1 heaped Tablespoon of Salt
6 cups of Water
Glaze
1 can of Guinness Stout
1 Tablespoon of Tomato paste
4 Tablespoons of Brown Sugar
Marinade
1/2 Large Bulb Onion
1/4 cup chopped parsley
2 teaspoons of Ginger Powder
2 Tablespoons Paprika
1 Teaspoon Oregano
1 Teaspoon Cumin
2 Tablespoons of Olive Oil
1 Tablespoon of Black Pepper
3 Seasoning Cubes
1/3 cup Brine
Garnish Options
1 Tablespoon of Sesame seeds
A handful of Chopped Parsley.
Method
Wash your chicken wings and set aside. Mix your brine and soak your chicken wings in the brine and set aside for about an hour.
In a pot, pour in your Guinness, tomato paste and brown sugar and bring to boil on low to medium heat.
Add 1 cup of the chicken brine to the glaze mix and boil till the mix becomes thicker and set aside.
In your blender, pour all the ingredients for the marinade and blend.
Remove the chicken from the brine and soak in the marinade for another hour.
Fire up your grill and place the chicken on the grill and allow to cook on both sides, constantly rubbing the marinade on the chicken at intervals.
When the chicken is almost ready, rub the glaze on the chicken and leave on the grill for a few minutes.
Take off the grill, rub with some more glaze and serve.
You can garnish with sesame seeds and parsley.
