Oat Cakes are the business and don’t let anyone tell you otherwise. It has thickness, it has density, it has flavour! I am loving the possibilities of toppings. For this one I decided to go a bit simple and use just chocolate chips but you can use dried fruits, lemon zest, cranberries, coconuts and a host of other toppings.
What inspired my oat cakes recipe you ask? Well, I posted on Instagram a few days ago about the versatility of oatmeal and I asked how people liked to enjoy their oats. I got so many suggestions from oat swallow to waffles. I decided to switch from my conventional oat consumption during the week to these delightful treats. The recipe is very straightforward and should take all of 30 minutes to make. It’s also great to make with kids as oats are never their favourite thing to eat. This way they start to have a better appreciation for this healthy ingredient. If you make this let me know how it works out for you.
Recipe for Chocolate Chip Oat Cakes
Ingredients
2 cups of Oatmeal (split 1.5 cups for the actual oat cakes and 0.5 cups for sprinkling on the board)
1/2 Teaspoon of Baking Powder
1/4 cup of Olive Oil
150ml of Boiling Water
1/2 teaspoon of Salt
2 Tablespoons of honey
1/2 teaspoon of Cinnamon Powder
1/4 Chocolate Bar (Crushed into small bits)
Method
Mix the dry ingredients together in a bowl. (Oat, salt, Cinnamon and Baking powder)
Pour in your honey and olive oil and mix till combined.
Slowly pour in your boiling water and with a wooden spoon mix till a sticky dough is formed.
On a board or flat surface, sprinkle some of the left over oats on the board before placing your dough to avoid sticking.
Cut a little piece of the dough onto the board and with your hand, press the dough till flat.
Use a small cookie cutter and cut out your oat cakes.
Place your oat cakes in a baking pan with lightly greased parchment paper.
Add your chocolate bits to the top of the oat cakes and place in a preheated oven of 180C.
Allow to bake for about 15-20 minutes.
Increase the oven temperature to 200C for 2-3 minutes to allow the oat cakes brown.
Take out and place on a cooling rack and serve.
