I cannot believe it’s taken me a whole year to write this cheesy garlic kokoro recipe. I shot this same time last year and just kept second guessing whether to upload it. Not even sure what that was about. Learning to live a little fearlessly as this has been a major problem for me so it holds me back from putting out things i am not 100% comfortable with. 2019 is the year I say no to fear. Constantly even asking myself, is anyone even reading all this story you keep typing? But pushing through the voices in my head.
Moving on from sentimental, for those that don’t know what kokoro is, its a snack made from cornmeal and some parts of garri (cassava). I grew up buying it on road trips in the south western part of Nigeria. I still see it on my way to Abeokuta, Ogun state with the ladies standing under the very hot sun selling little transparent nylons worth of kokoro. They come as cylindrical shapes as well as round shapes.
This was quite a difficult recipe to make for me. Figuring out the consistency was the harder part but once i nailed that, the rest was a breeze. I hope you try it. I also hope you share your results when you do. Enjoy this cheesy garlic kokoro recipe.
Cheesy Garlic Kokoro Recipe
Ingredients
2 cups of Cornmeal
1/2 cup of Garri (White)
7 cloves of Garlic
1/2 teaspoon of Chilli Powder
1/2 teaspoon of Ginger
2 tablespoons of grated cheddar cheese
3/4 cup of hot water
2 Tablespoon of shredded Parsely
1 seasoning cube
Oil for deep frying
Method
Mix cornmeal, garri, chilli powder, ginger, seasoning cube, and garlic in a bowl
Pour in your hot water and begin to mould till the dough is formed.
Pour in your grated cheese and parsley and mix in till completely combined.
Scoop a little into your palm and roll till cylindrical. Roll a little thinner so it cooks faster.
Heat up your oil and fry till golden brown.
Serve as is or with a slightly sweet dipping sauce.
