My beetroot pancake recipe was inspired by Soliat of Nula’s Kitchen . This weekend we were cooking up a storm and she made the most amazing red velvet pancakes. I remember her mixing it initially and using bissap colouring and not being too pleased about it. I kept trying to convince her that there was nothing wrong with it lol but she had a colour in her head and it had to be executed.
Well fast forward to the end of our cooking session, she made the red velvet pancakes she wanted and it turned out great. It got me thinking about how i could achieve something similar with fruits or vegetables. Zobo came to mind but that would be the default wouldn’t it? I decided to go with beetroot. That way, I got the benefits of beetroot and my yummy pancakes. I also made a drink with beetroots and pineapples for added benefits.
Beetroot has some benefits as listed below

- Moisturises dry skin and prevents signs of aging
- Promotes hair growth
- Boosts Haemoglobin levels
- Reduces inflammation

Recipe for Beetroot Pancake
Ingredients
1 small beetroot
2 eggs
1 cup of Flour
1/2 cup of cocoa powder
50 g of Butter
1/4 cup of Sugar
1 teaspoon of vanilla flavouring
A teaspoon of baking powder
1/2 teaspoon of cinnamon powder
1 cup of milk
1 cooking spoon of vegetable oil (for frying)
Method
Bring your beetroot to boil for about 15 minutes, peel and set aside.
In a food processor or blender, place your beetroot, eggs, sugar, flour, butter, milk, cocoa powder, cinnamon powder, vanilla, baking powder and blend till smooth.
In a pan with a teaspoon of vegetable oil at a time on fire, pour in your pancake mix and fry on both sides till cooked.
Serve your beetroot pancake with whipped cream, cream cheese frosting, fruits or any other topping of your choice.
