Stir fried noodles with beef is my staple Friday evening meal. Instead of having regular noodles, I always try to make it a bit more interesting. If you went to boarding school, you can relate to the concept of special noodles. Obviously noodles was a contraband item in boarding school but the naughty little girls we were, we found a way. Armed with our boiling ring, can of sardine or corned beef, we whipped up some questionable concoctions especially on Friday nights. Hence the continuation of this tradition from my teenage years.
With a bit of suya-spiced beef, green beans amongst other spices, you can make your regular noodles more gourmet. For the longest time, I never liked to do too much to my noodles. I always opted for the easier choice. Noodles, its seasoning and maybe a tablespoon of pepper always worked but after my boarding school experience, I decided to make my Friday noodles lit. It’s the weekend, its time to chill so hey why not?
Recipe for Stir Fried Noodles with Beef
Ingredients
2 Packs of Noodles
1 cup of shredded beef
1 cup of green beans
2 cloves of Garlic
1 tablespoon of chopped onion
2 cooking spoons of Sesame Oil
1 tablespoon of Suya Spice
1/2 teaspoon of Black pepper
1/2 teaspoon of Ginger
Method
Using a bowl, season your shredded beef with suya spice, ginger, black pepper and allow to sit for an hour if you can or you can use immediately if you are very hungry.
In a pot of boiling water, immerse your noodles for one minute, add one tablespoon of oil as you are boiling the noodles, take out and strain.
In a pan on high heat, pour in your oil and allow to heat up. Turn down the heat and stir fry the garlic and onions. Add the beef and stir fry till brown. Turn down the heat, cover the pot and allow the beef to cook.
Once the beef is soft, add the green beans and pour in the noodles with its seasoning and stir fry for one minute.
Serve hot.
