Coffee tigernut milk is not a combination that is new to many foodies. Some people have been making this combination for a very long time. I had a drink recently that combined both and I was intrigued at this mix. It still had a strong coffee flavour but the tigernut flavour came through.
Tigernut milk is a big feature in the LIN recipe book by 9jafoodie because it is non-dairy and all round great if you want milk but are watching your weight. That being said, this is not a diet recipe but you can skip the sugar content if you are on a diet. I also wanted to make sure this was a thick mixture of milk so I decided to bulk it up a bit with coconut milk so that the drink would have a thicker consistency.
This drink is great for breakfast as a pick me up and you can blend fruits like bananas in the drink to make it more interesting. I must however warn that blending banana in this particular drink may cause the coffee and banana flavour to compete for attention on your taste buds. They are complementary flavours but all equally overpowering.
Recipe for Coffee Tigernut Milk
Ingredients
2 cups of raw tigernuts
1/2 cup of coconut milk
2 teaspoons of coffee
3 cups of water
1 teaspoon of Vanilla Essence
2 tablespoons of Honey
Method
Soak tiger nuts for a few hours and with a strong blender and the three cups of water, blend the tigernuts.
Using a sieve, pour the blended tigernut over a sieve and squeeze the juices out of the chaff.
Sieve it multiple times till a lot of the chaff is out of the drink.
Pour the sieved milk into a blender with the coconut milk, coffee, vanilla essence and honey and blend.
Serve as a cool drink by either refrigerating or placing ice cubes in the glass.
