Zobo Chicken Pops? I promise I have not gone crazy! I am just enjoying experiments in my kitchen that turn out to be heavenly finds and would make happy tummys at christmas. How did I marinate my chicken in Zobo? Well I have these little jars of Zobo syrup I make for sale. After making a batch for a client, I decided to use a jar for myself.
I can tell you my mum and dad cracked the chicken bone and licked the plate after fronting for me. When I told them I used zobo to make the chicken, their jaws dropped. The glaze was sweet but spicy, I also grated lemon peels in the glaze to balance the flavors for the chicken. I guarantee you would enjoy this dish. I also decided to make chicken lollipops by frenching the drumstick for aesthetical value. You can also have your chicken whole with the same seasonings.
Recipe for Zobo Chicken Pops
Ingredients
8 Pieces of Chicken Drumsticks
1 cup of Zobo Syrup
1/2 cup of brown sugar
3 Scotch Bonnet Peppers
1/2 bulb of Onions
Seasoning Cubes
1 teaspoon of grated lemon zest
One teaspoon of Grated Ginger
1/2 cup of orange juice
Vegetable Oil for frying
Method
Wash your chicken drum sticks and with a small knife, make an incision into the skin towards the end of the drumstick. Cut off the skin from the bottom of the drum stick and use a large knife and chop off the end of the bone.
Use the small knife to push the chicken down to give the illusion of a lollipop and set aside.
Place drumsticks in a bowl, pour in the zobo syrup, chopped peppers, onions, seasoning cube, grated ginger and orange juice and leave to marinate for a few hours or over night.
In a pan, heat up your vegetable oil and gently place the chicken to fry till brown on all sides.
In a separate pot, pour the rest of the marinade and brown sugar and bring to boil. Place the fried chicken in the marinade and allow to boil till the mixture is thick on low to medium heat.
Add your lemon zest and serve your Zobo Chicken Pops.
