Gizzard Sauce
Pinch, Punch, first day of the month! I remember the first time I heard that little phrase, I could not wait for the next month to do it to people. It was so much fun for me. Ah the simpler times when we all got to be carefree. Now try pinching and punching someone in your old age, especially in this Nigerian economy, you may just get a slap and a busted knee cap. Ok that was harsh but you get my point haha.
Christmas is indeed the most wonderful time of the year and if you have been following my blog for at least a year, you would know during Christmas, I always have a 12 days of Christmas series either around recipes or entertaining guests or hacks. I had a few hacks last year and published a free e-book so you can access it at any time. This year I have something special planned but I can’t go spilling it till its time now can I? Just manage this gizzard sauce till then ok?
Recipe for Gizzard Sauce
Ingredients
A Pound of Gizzard
1 Bulb of Red Onion
2 Tomatoes
One Green Pepper
1 Yellow Bell Pepper
One Red Bell Pepper
Two Scotch Bonnet Peppers
2 Fingers of Carrots
1 Cooking Spoon of Vegetable Oil
A Clove of Garlic
1 Teaspoon of Grated Ginger
Seasoning Cubes
2 Tablespoons of Chopped Parsley (Optional)
Method
Wash gizzard and with chopped garlic, one scotch bonnet pepper, 1/4 chopped onion, seasoning cube and ginger, bring the gizzard to boil till soft leaving some stock from the boiled gizzard.
Chop all vegetables and set aside.
Heat up the oil in the pot and fry the gizzard till it starts to brown. Pour in the vegetables, stock and seasoning and stir.
Allow sauce to thicken and serve with Rice, Pasta, Plantain, Yam or any other accompaniment of your choice.
