The concept of Akara Pancake was inspired by 9ja Foodie or at least I think I saw the recipe on her blog first. I decided to try it and add the Afrolems spin on things. This month, I have decided to cut down on my carbohydrates and bad cholesterol sources significantly because December is usually an overload month. One of the breakfast items on my list is Akara Pancakes and I usually pair it with egg white omelettes. I extract the yoke because it is high in cholesterol and so I just use egg whites for the omelette.
What I love about this breakfast option is the versatility of the dish. You can choose to incorporate more food items into it or you can go light on it and splurge with the egg white omelette. You can also serve it with a spicy sauce or shrimp/fish stew or even pap (fermented corn pudding) which is the norm for breakfast in Nigeria. It was easier for me in this recipe to use bean flour as that produces a smoother pancake. However, if you decide to blend your beans from scratch, ensure your mix is smooth and it has a lighter consistency that your normal akara.
Recipe for Akara Pancake
Ingredients
A Cup of Bean Flour
1 egg white
1/4 bulb of Onion
1 Scotch Bonnet Pepper
Half of a Seasoning cube
1/2 cup of water
1 Tablespoon of Vegetable Oil
For Egg White Omelette
3 Egg Whites
A handful of chopped Spring Onion
1 Tablespoon of chopped parsley
Half of Yellow Pepper
1/2 of Red Bell Pepper
Half of a bulb of Red Onion
1/2 of an Avocado
2 small Tomatoes
One Tablespoon of Vegetable Oil
1 Seasoning cube
1/2 teaspoon of black pepper
Method
In a bowl, mix your bean flour, blended onion and pepper, egg white, seasoning cube and water.
In a pan with heated oil, scoop the akara pancake mix into the pan and allow to brown on both sides.
Flip pancake on each side to make sure it cooks.
For the Egg White Omelette
Chop your vegetables and set aside.
Whisk your eggs, season with seasoning cube and black pepper and set aside.
Heat up your pan and stir fry the vegetables on medium heat for one minute.
Pour in your eggs and stir fry with the vegetables and allow the eggs to set.
Chop up your avocado and mix with your egg white omelette to serve with the akara pancake.
