Spicy Parmesan Chicken Wings
When people hear about parmesan wings, the word spicy is never included in the same sentence. Garlic parmesan wings are usually the popular go-to chicken wing recipe. For those that don’t know what parmesan is, it is a hard and granular type of cheese with a very strong savory flavor. It is used in pasta dishes, soups (not Nigerian soups) and sometimes salads. People use it on chicken wings and sometimes even french fries because of the unique flavor it adds to the dish.
I purchased my little cup of Parmesan cheese from Shoprite and let’s just say I use it for special dishes only. If you are making chicken wings just for yourself, I may stick to just the spicy version without the cheese. However, if you are making wings for special guests, I would encourage you to show them you are a star in the kitchen. That’s what Afrolems is here for anyway. My Method
My method of making chicken wings is different but you can also choose to disregard some of my steps and make it your way. For example, I brown my chicken in a bit of butter with some sugar in a pan before baking. Some people go straight to the oven but I want my chicken semi-cooked before I leave in the oven. That way, it’s ready faster.
Another ingredient that I love in my chicken wings is parsley/coriander. if you visit shoprite, they have these leaves in their vegetable sections. I do realize these are not vegetables Nigerians traditionally cook with but believe me when I say they add a certain je ne sais quoi to your dishes. For example, if you chop some parsley into your pot of spaghetti and toss it with a bit of butter, it completely transforms the taste. Enjoy my little recipe.
Recipe for Spicy Parmesan Chicken Wings
Ingredients
10 pieces of Chicken Wings
5 Scotch Bonnet Peppers (Ata Rodo)
1 large Bulb of Onion
1/4 Ginger piece
4 garlic cloves
A handful of Parsley
2 Seasoning Cubes
A teaspoon of Black Pepper
One tablespoon of Vegetable Oil
1 Tablespoon of Butter
A teaspoon of Sugar
2 tablespoons of Parmesan Cheese
Method
In a blender, blend your peppers, parsley, onions, ginger, garlic, seasoning cube, black pepper and vegetable oil.
Using a glove, massage the blended mix into the chicken wings pieces. Use a fork to pierce the wings to enable the marinade go in.
Set aside and allow to marinate for 3-4 hours.
Preheat your oven to 350F or if your temperature is not indicated on your oven just have it between medium and high.
In a pan, heat up your butter and sugar and toss the wings in the pan till some parts are browned depending on how brown you want it.
Place in foil paper, seal and place in the oven to bake for about 30-45 minutes. To know if the wings are ready, pierce them with a fork and clear juice should come out of them.
Open up the foil for an additional 5- 10 minutes and increase the heat of the oven to allow the chicken wings brown properly.
Take out of the oven and sprinkle with the Parmesan Cheese and serve your spicy parmesan chicken wings warm.
