Scent leaf Garlic Mashed Potatoes
I enjoy the creaminess and silky texture of well made mashed potatoes. It’s one of those comfort meals that requires little effort on your part (except if you’re mashing a large quantity, then you might need to flex your muscles a bit lol)
I was looking to add a different flavor to my potato mash recently; then came garlic and my scent leaves to the rescue. It turned out to be a tantalizing blend of flavors.

RECIPE FOR SCENT LEAF GARLIC MASHED POTATOES
INGREDIENTS
8-10 Irish potatoes
5 whole garlic cloves,
1 stalk or less scent leaves/effirin
120ml or 1/2 cup liquid milk
3-4 tbspns olive oil or melted butter
Salt & Black Pepper, to taste
METHOD
Peel potatoes and chop into quarters (set aside in a bowl of water to prevent browning); peel garlic cloves and halve them
In a large pot, bring lightly salted water to a boil; add the potatoes & garlic..Boil for about 30 minutes or until potatoes are soft enough; check for doneness with a fork; drain water.
In the same pot or a sturdy large bowl, use a potato masher or strong wooden spoon to mash potatoes and garlic with the milk, oil or butter, and chopped scent leaves. (Add enough milk to make the mash creamy but not runny)
Season with salt and black pepper, serve garnished with a few whole scent leaves
Can be eaten with your preferred sauce/stew and protein such as chicken, beef etc.
Things to Note About This Recipe
- Substitute whole garlic cloves for powdered garlic if you prefer.
- You can use cream or yogurt (mixed with some water) in place of fresh milk.
- Use other herbs in place of scent leaves e.g. basil, curry leaves, oregano etc
