Dodo and Egg is one of the traditional breakfast options in a Nigerian household. If you are not Nigerian, you are wondering if I am talking about a dodo egg, No 🙂 Dodo is also known as Fried Plantain in Nigeria. Not sure why we came up with that name but hey, it’s here to stay. I first posted this recipe on Instagram and everyone was so amazed at the colors in the pan and all promised to make this for breakfast the next day. I call this particular version the Dodo and Egg that studied abroad.
Some of my followers called this the Dodo and Egg that studied abroad. I am going to have to agree with them because this is not necessarily the way we would make it. The egg is usually made in form of Egg Stew or just a regular Omelette. Some even compared my version to Shakshouka which is more of a North African dish but it didn’t even have nearly as much Tomato or even cumin or any of the spices used to make it. Well, what is most important is that we all enjoyed it. Enjoy my simple dodo and egg recipe.
Recipe for Dodo and Egg
Ingredients
1 finger of Plantain ( Cubed and Fried till golden brown)
3 Small Eggs
1/2 small bulb of Onion
Handful of chopped carrots
A handful of chopped green and red bell peppers
2 scotch bonnet peppers (ata rodo)
A tablespoon of chopped coriander (optional)
1 tablespoon of grated Parmesan Cheese (Optional)
Chicken seasoning cube
A teaspoon of black pepper
1 tablespoon of butter
A teaspoon of vegetable oil
Method
Heat up your butter and vegetable oil mixed.
Toss in your already fried plantain in the butter
Break your eggs over the plantain and sprinkle your chopped vegetables, cheese and seasoning over the eggs and plantains.
Reduce the heat and cover the pan till the egg sets and serve hot.
