Ofio Muffin is the most time consuming muffin to make if you do not have access to already grounded Tigernut flour. I just thought to sound a subtle warning before you all come for my head. My Tigernut flour was purchased from a speciality store in Toronto but you can always make yours at home. You can grind the dry version and sift to achieve a powdery form. Ofio popularly known as Aya and also known as Tigernut has become a very sought after food ingredient because it has been named on the world economic forum as a superfood. Do you remember eating them as a kid and loving the fact that you could chew them till the juices flowed and spit them out? I know I did. Little did I know that I would be using the roughages for a nice dessert treat someday?
There are some great benefits of Tigernuts. They have been proven to be great anti-inflammatory agents especially for people suffering from arthritis. Ofio is also a great source of protein if you would like to add it to your smoothies. It is a great source of Iron which is especially great for women to replenish their iron content. I guarantee you the flour will never be completely smooth as the texture is already quite coarse. If you would like to balance the grainy taste of the Tigernut, you can add some all-purpose flour and halve the Tigernut flour in the recipe.
Recipe for Ofio Muffin
Ingredients
1¼ cups of already grounded Tiger nut flour
½ cup of chopped Strawberries or any fruit of your preference
¼ cup of coconut milk
½ cup Sugar
1 teaspoon baking powder
2 eggs
Method
Whisk your egg and coconut milk in a bowl and set aside
Add the other dry ingredients and mix till a slightly thick but runny batter is formed
Mix in your strawberries
Preheat oven to 375 F, grease the pan and pour in your mixture into your muffin pan.
Place in the oven to bake for 20 – 25 minutes.
Tip: To ensure your muffins are ready, pierce a toothpick through the muffin, if it comes out dry, it is ready.
