• Scent Leaf Fried Rice

    Scent leaf fried rice has been on my mind for a few months primarily because it reminds me of basil fried rice. One thing I miss about living outside Nigeria is authentic Asian food. Thai, Vietnamese, Korean food are some of my favorites. They are so full of flavor, I hope some people will open some of these restaurants here in Nigeria.

    Back to this scent leaf fried rice recipe. It is a nice twist to your regular fried rice. It gives the fried rice some character with its fragrant twist. I also used basmati rice for this recipe but you can use regular long grain par boiled rice. If you want to get your fried rice recipe to the texture that Asians have it, boil your rice a day before and put in the fridge and fry it the next day. If you do not have the time, you can use the rice immediately. Enjoy this simple recipe.

    Recipe for Scent Leaf Fried Rice

    Ingredients

    1 cup Basmati Rice

    1/4 cup of Melted butter

    4 tablespoons of Vegetable Oil

    1/2 cup of Shrimp

    A handful of Chopped Scent Leaf

    1 Tablespoon of Curry Powder

    2 Garlic cloves

    1/4 bulb of Onion

    A handful of chopped Carrots

    A handful of Peas

    2 Scotch Bonnet Peppers (Ata rodo)

    Chicken seasoning cubes

    1 Tablespoon of Chopped Parsley (optional)

    1/2 teaspoon of Black Pepper

    1/2 teaspoon of White Pepper

    A pinch of Thyme

    Method

    Wash and boil your rice with 1 chicken seasoning cube

    Heat up your butter and vegetable oil.

    Fry your garlic on medium heat, add your chopped onions and scotch bonnet peppers.

    Add the rest of your chopped vegetables, seasoning cubes, peppers, thyme, curry and shrimp and stir fry.

    Add your rice and stir fry till all seasoning is incorporated.

    Lastly add your scent leaf, stir and serve hot.

      I haven’t tried this recipe yet but you’ve got me sooooo excited.
      Can’t wait to try it this weekend. I’ll probably include it on my Easter family lunch menu

        Hi, the scent leaf is not cooked for long. It is cooked for about a minute.I used a handful of chopped scent leaves for the amount of rice listed above.
