Plantain salad is not a new dish on the food scene but it certainly was new in my kitchen this evening when I played around with it. For lovers of plantain, I bet you have added plantain to any possible dish you can. I know I have as seen with some of my recipes. I had dodo gizzard dumplings, Plantain and beef pie and plantain toffee balls. I have successfully completed a three course meal using plantains in my life-time. I think I can continue to exist a happy person. This plantain salad recipe did not take very long to make and was very straightforward. As always, you can add and subtract to a recipe to make it uniquely yours. I played around and tossed in some shrimp. I also used sweet chili salad dressing for my salad. If you are not a cheese lover, you can skip the addition of cheese to your own. I wanted to add some almonds or peanuts but I figured for a first try, I should keep it simple. Recipe for Plantain Salad
Ingredients
1 finger of ripe plantain
A head of lettuce
1 small red bell pepper
1 small green bell pepper
1 small yellow bell pepper
1 small bulb of red onions
2 firm tomatoes
1 tablespoon of parmesan cheese
3 medium sized shrimps
1/2 seasoning cube
1 tablespoon of vegetable oil
1 tablespoon of sweet chili dressing
Method
Cube your plantain, fry and set aside.
Chop your vegetables into your salad bowl and toss
In a pan, heat up vegetable oil and stir fry your shrimps and season. Allow to cool
Toss in your plantain and shrimps once cool into your bowl of vegetables.
Sprinkle the parmesan cheese over the salad
Drizzle your dressing over and serve cool.
