• Kanyan Recipe – Liberian Snack

    I was scrolling through Instagram this week and i came across an account I was following called MyPepperPot. She was sorting through roasted peanuts and said she was about to make kanyan that was a Liberian snack. I got curious and asked for the kanyan recipe and before she could even reply, I had googled it. I found a blog that had it and I immediately pulled out my equipments. I loved making and eating this mostly because all week I had been craving garri and groundnuts(peanuts) so this was an interesting way to satisfy the craving.

    I had to tweak the recipe I found on the blog a little to match my taste. I also played around with the quantity as I wanted to start small. For the Liberians that follow this blog, I hope I pulled it off. Once I was done, everyone in the house was rushing for the little squares I had cut out. I am thinking of making some to take to work. For the non-Nigerians that follow this blog, garri is made from cassava. It is processed differently from cassava flour.     Recipe for Kanyan

    Ingredients

    1/2 cup of Garri

    11/4 cups of Groundnuts (Roasted Peanuts)

    1.5 tablespoons of Sugar

    3 Tablespoons of Honey

    Method

    Blend your garri till smooth.

    Blend your peanuts till smooth.

    Blend your garri with the sugar and slowly pour in the honey.

    Add the peanut butter and blend till mixture is fairly smooth.

    If using a mortar and pestle, pound ingredients in smaller quantities and increase till all ingredients are exhausted.

    Scoop the mix into a bowl and smoothen to mould into a large square shape.

    On a flat plate, flip over the bowl with the mould and cut into small squares.

    Alternatively, scoop the mix into your palm and roll into a ball.
