I was at my friend’s house this weekend and I woke up dreaming of pancakes. We went to the kitchen to look for ingredients and it turned out that she didn’t have baking powder I needed to make the American style pancakes I was craving so I settled for Savory crepes instead. When people think of crepes, they think sweet. Have you ever had crepes that were savory? They are just as interesting except there is a slight sweet flavor but you immediately get to mix that with savory without compromising on the great taste. Crepes are very similar to pancakes except you do not add baking powder to the batter and they are usually lighter than pancakes. This is a perfect breakfast or brunch dish for the weekend. If you are feeling adventurous during the week, you can go for it but I must warn you, you may end up eating so much of it you may not go to work. Enjoy this simple breakfast dish.
Recipe for Savory Crepes
Ingredients
½ cup of all-purpose flour
½ cup of milk
1 tablespoon melted butter
2 eggs
1-teaspoon sugar
Pinch of Salt
For the filling
½ red bell pepper
½ green bell pepper
1 Tomato
½ cup of chopped carrots
1 Spring onion
1 Yellow pepper
2 turkey sausages
Seasoning cube
Method
Step 1: Pour your dry ingredients in your bowl
Step 2: In a separate bowl, whisk your egg
Step 3: Pour in your milk into the egg and combine. Add the melted butter at this point and mix with the egg and milk.
Step 4: Pour your wet ingredients into your bowl of dry ingredients and mix until a smooth batter is achieved.
Step 5: Heat up some oil in your pan on medium heat and pour in a bit of your batter either directly from the bowl or with a spoon.
Step 6: Swirl the pan around till the crepe spreads thinly. Flip on the other side and allow to cook and take out when slightly browned on both sides but not too brown.
Step 7: Chop your vegetables and sausages and stir fry with your seasoning cube.
Step 8: Scoop some of your filling into the crepe and roll.
Serve warm.
