• Coconut Rice Pudding

    Coconut Rice pudding? Yes Coconut Rice pudding is amazing. Dessert from our beloved Rice is a huge possibility just open your mind 🙂 Tuwo Rice is one of those grains that lay in my house without quick uses. Partly because I am not hausa so I don’t always have a lot of use for it. When I discovered some people from the North make puddings from Tuwo Rice, I decided to give it a short in my own way. There are a few ingredients used in the North along the lines of cloves maybe a little bit things that would make the pudding spicy. Anyone that knows and cares to share would be greatly appreciated. Rice is a staple in many Nigerian homes and we have crafted many dishes around it. Why not include desserts? If you are diabetic or just sugar averse, I recommend staying away from the condensed milk as it is very sweet. You can substitute by using ½ cup of just coconut milk. If you are diabetic, please check with your doctor on what type of milk you can substitute with. Settle into this small bowl of coconut rice pudding.

    Recipe for Coconut Rice Pudding

    Ingredients

    1 cup of cooked Tuwo rice (short grain rice)

    ¼ cup of Condensed milk

    ¼ cup of Coconut milk

    ½ cup of chopped fruits

    A handful of Grated Coconut

     

    Method

    In a pot on low heat, pour in your already cooked tuwo rice, the coconut milk and the condensed milk. Stir and leave to simmer on low heat till the milk becomes absorbed in the rice.

    Mash the rice a little bit as it is boiling in the pot of milk. Once rice has absorbed the milk completely, take off the stove and allow it to cool.

    Chop the fruits you would like to add to the pudding and set aside.

    Grate your coconut and set aside or use store bought coconut flakes.

    In a pan, pour in your coconut flakes and heat up to toast. Stir it around so it does not burn until you achieve a light brown color and take it off the heat.

    Serve the rice pudding with the fruits and toasted coconut flakes sprinkled over it as a dessert.

        You can but you might need to boil a little longer. You can use evaporated milk but you might need more sugar since condensed milk is sweeter.
