• Avocado Egg Salad

    In this frenzy of valentine, I promise I have not forgotten my fit-fam folks. This avocado egg salad is the perfect starter for your night in. You can make a lot to last till the next breakfast or you can reduce the amount to last just for the evening. Either way, it is certainly a yummy starter packed with nutrients that are good for you.     If you hate spicy food, you can skip on the scotch bonnet peppers as they are raw. When i ate the sandwich after photographing it, I bit into one of the scotch bonnet peppers and let’s just say I needed a thick drink to get rid of the heat. However, I do like the dimension it brings to the salad. It’s not spicy till you bite into the scotch bonnet pepper. This is also a great on the go breakfast option. For those that are looking for healthy options for breakfast, this starter is a good one. Without further ado, enjoy this very simple and quick recipe of avocado egg salad. 

    Recipe for Avocado Egg Salad

    Ingredients

    1 Avocado Pear

    2 Eggs

    1 Scotch bonnet pepper

    1/4 teaspoons of Black pepper

    1/2 seasoning cube

    1/4 lemon slice

    2 slices of whole wheat bread

    Method

    Boil your eggs and immerse in water to cool.

    Peel your avocado and mash in a bowl.

    Squirt your lemon over the avocado.

    Peel the eggs, chop and mix with the avocado.

    Mix the black pepper, seasoning and scotch bonnet pepper and set aside.

    Toast your bread and roll out with a rolling pin, cut the edges off and serve the avocado egg salad on the bread.

      Avocado Egg Salad is a good source of easily assimilable protein. You’re right – Avocado Egg Salad is great supper or breakfast option. If we want to reduce weight – a combination of vegetable protein in avocado and animal protein in eggs – can speed up metabolism at night. It’s good to remember this recipe! 🙂

      Good food,but what about the mixed black pepper,scotch bonnet and seasoning aside,would they be added on the avocado too?

      I usually have my avocado with nothing but salt but it’s great to bring a bit of change. A splash of cream and some mexican spices create a nice variant too.
