Valentines day is coming is drawing nigh. I am challenging the men that follow the Afrolems brand to take charge of this occasion. This honey garlic oxtail bites is first on the list. If you need practice time, practice today! You can always boil the oxtail a few days in advance and keep in the fridge with the stock. That way, you are not doing a lot of cooking on the day of. I really believe in the guys that follow this blog, you can do it! This recipe is so easy the only thing that takes up the time is boiling your oxtail till soft. If you have a pressure cooker, that would be a good option to use to get your oxtail soft. For the green vegetable to use, you can use parsley if you have access to that as parsley masks the smell of garlic in your mouth. You can skip on the plantain altogether or you can add it to make it more interesting. Recipe for Honey Garlic Oxtail Bites with Plantain
Ingredients (Serves 2 people)
8 Pieces of Oxtail
1 medium bulb of Onion
3 cloves of Garlic
2 Scotch bonnet peppers
1/4 teaspoon of grated ginger
1 seasoning cube
a pinch of salt
2 tablespoons of Honey
1 tablespoon of butter
1 teaspoon of vegetable oil
1/4 of a whole plantain (cubed and fried)
A handful of pepper and green vegetable to garnish
Method
Wash and season oxtail with onion, pepper, ginger, seasoning cube and salt and bring to boil till oxtail is very soft.
In a pan, heat up your butter and vegetable oil, stir fry your garlic on medium heat.
Toss in oxtail and stir fry for about a minute.
Add honey and stir fry till oxtails are coated and caramelized. Add the left over stock and allow to simmer till mixture is thick.
Serve with the already fried plantain, pepper and green vegetable.
