My move to Nigeria has made me realize I really miss authentic Asian dishes and stir fried noodles with chicken is only one of them. On that list I also have basil thai fried rice, pho, steamed bao and other yummy things that I should not bother listing. If you have ever requested to have noodles at Nigerian weddings, you would see that some caterers use glass noodles but some also use other types of noodles. Glass noodles are the quickest to make, in fact you may not even need to boil them. Just soak them in hot water and stir fry with your sauce after and voila it’s ready. This was honestly the fastest dinner I have ever made and I think once you have all your ingredients you are good to go. If you are like me and love your Asian inspired dishes or like my Nigerians will say Chinese noodles, then whip out your pan and get to stirring.
Recipe for Stir Fried Noodles with Chicken
Ingredients (Serves 2)
2 cups of boiled glass noodles
1/2 cup of shredded chicken
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
8 pieces of green beans
4 pieces of spring onions
2 scotch bonnet peppers
1 small red onion
2 cloves of garlic
1/2 teaspoon of ginger powder
1 tablespoon of Soy Sauce
Seasoning cubes
1 tablespoon of Butter
1 tablespoon of vegetable oil
Method
Season your shredded chicken with ginger powder and seasoning cubes.
In a pan of vegetable oil on medium heat, stir fry the chicken till cooked which should be about 8-10 minutes. Take out the chicken from the oil and add the butter.
Once the butter has melted, stir in the vegetables, soy sauce and the seasoning immediately.
Toss in the chicken and the boiled noodles and stir fry for about 1-2 minutes.
Serve hot.
