• Date Pancakes

    Sometimes we can use natural sugar sources to sweeten our food. I’d rather use a sugar source that has other benefits. Dates are a great laxative food so if you have been constipated, you may want to include some dates in your diet. They are also a great source of iron especially for anaemic patients or women in general as Iron deficiency seems to be a problem for women. If you are low on energy, these amazing bites would fuel your energy up really quickly. I substituted the sugar in my regular pancake recipe for dates and it was just as delicious and I certainly was not tired today. Hope you enjoy my date pancakes.

    Recipe for Date Pancakes

    Ingredients (Makes 4-5 small pancakes)

    1/4 cup of dates

    1/4 cup of water

    1/2 cup of all purpose flour

    1/4 cup of almond milk (or any other milk)

    1 egg

    1.5 tablespoons of melted butter

    1/4 teaspoon of vanilla extract

    1/4 teaspoon of baking powder

    Method

    Remove the seeds from your dates and blend with the water.

    Mix all your ingredients including the blended dates till a smooth paste is formed. 

    In a pan with a little oil just enough to grease the bottom of the pan, pour in your mixture in small amounts and flip over till both sides are brown.

    Serve with some fruits and syrup if you wish.

      Definitely a must try breakfast idea! I don’t often use dates in my cooking but I think I will buy some nest time I go shopping 🙂

      Looks delicious!! I’ve turned into a pancakeaholic, and have been making pancakes by adding different ingredients each time but I never had it with dates. Great idea!

      The ‘no sugar’ just got me. I love anything to put sugar off my menu and will sure try this.
