Someone recently pointed out in a comment on the blog that I do not have Pork recipes. I combed through my recipe list and truly didn’t find any. I promise it was not intentional. I eat pork once in a very red moon not because it is not tasty but just because my metabolism in general is slower and pork takes a longer time to digest than lean protein. So i typically reserve it for special occasions. There was really no special occasion today except that I wanted to at least start building some pork recipes on the blog. I decided to start with my favourite pork chops recipe and I paired it with savoury rice. My sister was upset with me because I did not make a lot of it. Ah well, there is always a next time. If you do not eat pork, you can substitute the pork in this recipe with beef and you should be ok. Enjoy this very simple and tasty recipe.
Recipe for Pork Chops and Savoury Rice
Ingredients
1 pound of Pork
1/4 bulb of Red Onions
1 stalk of Rosemary
4 pieces of small Scotch bonnet peppers
4 Garlic cloves
Small pieces of Ginger
Seasoning cubes
1/2 teaspoon of Black pepper
1 tablespoon of Lemon juice
1/4 teaspoon Salt
1 tablespoon Butter
1 cooking spoon Vegetable Oil
1 teaspoon Sugar
A handful of chopped yellow bell pepper
A handful of chopped Spring Onions
1 teaspoon of All purpose flour
Savoury Rice
1 cup Rice
1 cup chopped Vegetables
Seasoning cubes
1 Cooking spoon Vegetable Oil
1 Teaspoon Lemon Juice
1/4 teaspoon Black pepper
Salt to taste
Method
Blend your ginger, 3 pieces of garlic, pepper and seasoning cubes and pour over your chopped pork pieces.
Add the rosemary and onions and allow to marinate for at least an hour or longer if you have time.
In a pan, heat up the butter and oil and chop your remaining garlic and stir fry on medium heat.
Add the marinated pork but not all the marinade at once and allow the pork to brown on both sides.
Reduce the heat to allow the pork cook.
Add the lemon juice, black pepper, sugar salt and if more seasoning is required, add it here.
Add the rest of the marinade and allow to cook. Add 1/2 cup of water if the pan is getting dry and one teaspoon of all purpose flour to thicken the sauce.
Add the yellow bell pepper and spring onions and immediately turn off the heat so the vegetables do not become too soft.
Savoury rice
Wash and bring to boil one cup of rice. Season with the lemon juice, black pepper, salt and seasoning cube.
When the rice is soft, add the oil and stir in the chopped vegetables for 1-2 minutes.
Serve the rice with the pork chops.
