I am not certain why the name tasty fiesta was chosen to name this potato casserole dish in Nigeria? Anyone care to venture an explanation? At first when I used to see fiesta come up in my search terms, I thought it was the Jamaican dessert called fiesta. Alas, I realized being that the searches were coming from Nigeria, it had to be the Potato dish. This Potato Casserole is the perfect breakfast or lazy dinner dish. Lazy, if you have someone chopping all the vegetables for you. However, you can make it the night before and serve it the next day. I made quite a lot so I plan to have it for breakfast everyday this week. I added sausages to mine but feel free to add whatever else you like to your casserole. Some people add fish to theirs and chicken is not a bad idea as well. Feel free to explore as many protein options to enjoy this delicious meal.
Recipe for Potato Casserole
Ingredients
4 Large Irish Potatoes
4 Large Eggs
1 Sausage
1 Large Tomato
2 Spring Onions
1/4 Red Onion
Half of a Red Bell Pepper
1/2 Green Pepper
Half of a Yellow Pepper
1/2 Carrot
2 Seasoning Cubes
1 Tablespoon Melted Butter
1/4 cup of Milk
2 Tablespoons Flour
Salt to Taste
Method
Peel your potatoes and in a pot of boiling water, dunk them and allow to steam for 5 – 7 minutes.
Chop all your vegetables and set aside.
Whisk your egg, milk, flour, seasoning, salt and melted butter and set aside.
Chop your potatoes into smaller chunks, toss in your vegetables and finally your egg mix.
Pre heat your oven to 350F
Line the pan you would use with foil paper. Grease the foil paper and pour in your potato mixture.
Bake for 45- 50 minutes.
Take out the oven and allow to cool.
Serve with Ketchup or Tomato based sauce or consume as is.
