• Nigerian Egg Roll

    When I made this Nigerian Egg Roll and began photographing it, I started thinking of a story to tell to go with this recipe. My mum mentioned that I include a story about egg rolls and motor parks. I replied saying I had no clue what she was talking about. She said that egg rolls are synonymous with motor parks in Lagos, Nigeria. That people going on a journey always bought egg rolls because it was filling as it may have reminded them of bread and egg. After biting into it, i could see why. The dough has a sweet and savory flavor but with the egg, it felt like a complete breakfast. I started thinking of dips for it and honey mustard came to mind as the perfect balance for the flavor. I really loved it, hope you will too. 

    Ingredients (Serves 4 people)

    4 Large Eggs

    2 Cups of All purpose flour

    2 1/2 tablespoons of Salted Butter

    1/4 teaspoons of Baking Powder

    1/4 cup of sugar

    1 seasoning cube

    1/2 cup of warm water

    1/4 teaspoon of salt

    Vegetable Oil for frying

    Method

    Boil your eggs for 8-10 minutes and set in a bowl of cold water to cool. Peel the eggs and set aside

    In a large bowl, mix all the dry ingredients together.

    Slowly work the butter into the bowl of dry ingredients till the flour is crumbly.

    Gradually pour in your warm water and combine till a dough is formed. If you need a few more tablespoons of water, feel free to add gradually till your dough forms.

    Sprinkle some flour over a clean surface, cut some of your dough and roll out thinly about 1/4 thickness or less.

    Mould the dough over the egg, smoothening the edges if any with water for it to stay and toss in flour again.

    In a deep fryer or a pot with a lot of oil, deep fry the egg roll till golden brown and serve.

      Oh wow, superb, I love stuff like this with eggs, I have an indian inspired ‘nargisi kebab’ planned for this weekend but will certainly give this ago in the near future 🙂

        Yes many people are used to the Chinese egg rolls. Egg rolls in Nigeria mean a completely different thing 🙂

      These look great! I do have a recipe for egg rolls but its definitely not as quick as yours and i like when things happen “quickly” in the kitchen so i am definitely going to have a go at this! And your mum is right about egg rolls and motor parks! It isn’t just in Lagos too! I remember looking forward to buying egg rolls at motor parks in Benin on my way home to Lagos from the University of Benin! Thanks for sharing! 🙂

        I look forward to your reading your recipe 🙂 I guess the motor park thing is really a thing haha I know puff puff was a necessity but this is the first I am hearing about egg rolls.

      In India, we make something called Egg Pakoras. But we make a batter with chickpea flour. Making a dough to coat the eggs sounds really interesting. Bookmarked to try one of these days. thanks so much for sharing.

      Love reading about food from different countries!
      These remind me of something we have in the UK called ‘scotch eggs’. They are eggs with sausage meat around them and they’re delicious!
      I’d love to try one of these, especially dipped in the sauce!

        We also have scotch eggs in Nigeria but I guess Nigerians wanted something more with eggs hence the egg roll recipe.

      Yes i remember this snack. The hawkers in Yaba – Ekenedilichukwu motorpark forcefully ingrained it in our memory. LOL. Those trips from Lagos to FGGC schools in the east…. Good times!
