• Cous Cous and Stir-Fried Mango Chicken

    Sometimes I get bored of rice. Sometimes o!!! In those moments, I turn to other options that remind me of rice which includes, quinoa and cous cous. The feeling of being able to eat them both with a sauce just gives me so much joy. Ok maybe I am exaggerating a little bit but I do love to switch it up a bit. I decided to switch up recently with some cous cous and incorporated my winning ingredient this spring, Mango!!! I am so happy I can get some fresh mangoes at the grocery store. My mango addiction came from my mum, immediately it was sherri mango season, my dad just knew to buy baskets and baskets of Mangoes and store in the fridge and freezer. The things that spice up their marriage till tomorrow baffles me lol. Back to the topic, If you are looking for something different and quick to try for lunch or dinner this week, try this recipe.

    Recipe for  Cous Cous and Stir-Fried Mango Chicken

    Ingredients

    1/2 cup of cous cous

    1 tablespoon of oil

    3 cloves of garlic

    2 scotch bonnet peppers

    1/2 cup of chopped spring onions

    1/2 cup of chopped carrots

    2 medium tomatoes

    1/4 cup of chopped onions

    1/2 cup of chopped mango

    1 cup of chopped chicken breasts

    1 tablespoon of butter

    Seasoning cubes

    1/2 cup of water

    Method

    In a small pot, boil 1/2 a cup of water and place your cous cous in the boiling water. Pour in the tablespoon of oil and chop one of the garlic cloves and toss into the pot and boil for about 3- 5 minutes on high heat. Check to see if soft and drain the remaining water and set aside.

    Season the chicken breasts with the seasoning cubes and set aside.

    In a separate pan, heat up the butter on low- medium heat, fry the garlic and onion and stir fry the seasoned chicken breast for about 5- 7 minutes. Add the tomatoes and stir fry and allow the chicken and tomatoes to cook properly. Stir fry often to make sure it isn’t burning while maintaining the low-medium heat. 

    Once the chicken is cooked inside (check by cutting a piece and making sure it isn’t pink inside), stir in the other vegetables and mango and additional seasoning cubes if needed. 

    Serve with the cous cous.

      Hi, good morning, I really like your recipes because they are interesting, new and easy to follow. My only problem is one can’t download the recipes. It’s stressful going online again and searching for the particular one you’d love to try. So, is there anyway your recipes can be downloaded?
