I had some left over rice in my fridge and my sauce was done. I started thinking about what to do with the rice and I remembered one of my pinterest trolls were I saw rice burgers and I decided to give it a try. It is probably important to do this with rice that is not fresh off the stove or you can use sticky rice. I used regular parboiled rice that was a day old. I also ran out of chicken and beef if not I would have used those for my protein choice but feel free to modify with what works best for you. If you have a date and want to impress, you can serve this but I suggest making tiny portions and serving it as an appetizer because a Nigerian man may not appreciate this tiny portion of food lol. Ingredients
1 cup of left over boiled rice
1 cup of shrimps
1/2 tomato
Handful of chopped green pepper
1 seasoning cube
2 tablespoons of oil
1 tablespoon of flour or 1 table spoon of bread crumbs
2 tablespoons of hot sauce or stew ( I used sriracha sauce)
Method
With a blender or food processor, grind the rice a little bit to have a slightly mashed texture. Do not grind fully so the burger is half whole rice and have mashed rice. In a pan on low heat, scoop some rice unto the pan and flatten out in the shape of a burger. If you are using a non-stick pan, you can fry without oil; however, if you are using a regular pan, drizzle a little bit of oil on the pan first.
Peel and devein the shrimps. Place in a blender or food processor and blend with the seasoning, tomato and green pepper. Take out pour into a bowl and stir in the flour to add a little thickness.
In a pan on low heat, drizzle 1 tablespoon of oil and with a spoon scoop the shrimp mix and fry. Flatten the top of the shrimp patty and when it’s solidified, flip it over and fry on the other side till cooked which should take about 3 minutes on low heat. P:S if you are making chicken or beef patties, they will take longer to cook.
Mount the rice, some vegetables if you like, your stew or hot sauce, the shrimp patties, more sauce and then the top rice burger and serve warm.
