A low carbohydrate diet with Nigerian food has to be the hardest thing ever. However, it is not an impossible one. Speaking of low carb diets, it’s time to get on one as summer is fast approaching and no more hiding under jackets and coats. If you would like a low carb nigerian timetable, comment below and I would draft one up and maybe we could all challenge ourselves together with that. If a typical Nigerian sees you eating a salad, they will ask you “that one go bele ful you so? all this grass wey you dey chop” Yes my pidgin english is on point hehe. For those that do not understand pidgin what it means is would you be full from the grass (leafy greens) you are eating? Salads do not always have to be leafy greens although leafy greens are amazing and even filling sometimes but you can switch up your options with this black eyed pea salad. Feel free to add or subtract from the salad to your own taste after all recipes are only guides for creativity.
Ingredients
1 cup of black eyed peas (Oloyin beans)
1 avocado pear (cubed)
1/4 cup of chopped cucumbers
1/4 cup of chopped tomatoes
1/4 cup of chopped red, green and yellow bell peppers
1/4 cup of corn kernels
1/4 cup of chopped onions
1 tablespoon of crayfish
1 teaspoon of chilli powder
1/2 seasoning cube (Bouillon cube)
2 tablespoons of lemon juice as dressing
Method
Pick, wash and bring beans to boil. Season with crayfish, seasoning cube and pepper.
In a bowl, add all chopped vegetables, add your beans and drizzle the lemon juice as dressing over the salad. You can skip on the lemon juice or add any other dressing you like.
