Being a lover of seafood, i think the most appropriate gift to give to my mom this Mother’s day is to dedicate this post to her. I love you mama. I was craving croaker fish and I knew the only place that was guaranteed to have it was the Asian store so I grabbed my bank card and embarked on a somewhat long journey to go buy fish. It was well worth it when I was done though. I made this fish very spicy with all the elements of spicy. My mum also has an incredible passion for pepper, i guess that is another way we are very alike. It was a good thing I paired the fish with yam because it definitely helped balance the pepper. I was in no mood to drink glasses of milk to help out so my yam was sufficient. Besides I added some milk to my yam so that helped balance the pepper.
Ingredients
5 medium chunks of Yam
1 cup of coconut milk
1 tablespoon of palm oil
1 Small Croaker Fish
2 Yellow Scotch bonnet peppers
1/4 bulb Onion
1 tablespoon of ginger powder
1 seasoning cube
A pinch of Thyme
2 Tablespoons of Suya spice
1 teaspoon of Cameroonian pepper
Salt to taste
1 tablespoon of butter
Method
In a pot, place your peeled yam and bring to boil. Salt once yam is soft and take off the heat.
In a bowl, place the yam and mash. Pour in your coconut milk and whip the mashed yam. Pour in your palm oil and combine thoroughly and place aside. p:s the palmoil has no significance, i just love the taste of palmoil and yam and wanted a different colour for my food for aesthetics purposes.
Pre-heat the oven to 375F. Descale, gut and wash the fish and season with all the above spices and onions. Place fish in foil, place the dollop of butter on the fish, cover in the foil completely and place in the oven.
After 15 minutes, flip the fish on the other side and allow to grill for another 15 minutes.
Serve with the mashed yam.
