• Lemon Butter Rice Recipe

    Most of my friends are always asking for quick tasty meals they can make and get out of the kitchen. Being that Nigerian dishes do not fit that category, sometimes it is hard to recommend something to them without asking where can i get these your many ingredients from? Lemon Butter Rice immediately came to mind amidst all the questions. There are many ways to make this very simple rice dish. I personally would have added parsley to it and other spices but my Nigerian followers would soon start asking plenty questions so I decided to make the simplest version. Feel free to alter it as much as you like after all recipes are just guides for you to express your own creativity. This is very light on the palette and quick to make. You can enjoy it with some fish or chicken, i personally chose shrimps because it would be the quickest to cook.

    Recipe for Lemon Butter Rice

    Ingredients (Serves 1)

    1/2 cup of Parboiled rice ( You can use other types as well)

    2 tablespoons of lemon juice

    1.5 tablespoons of butter

    1 chicken seasoning cube

    1/2 teaspoon of black pepper (You can also use any other type of pepper you have)

    2 cloves of garlic minced.

    5 pieces of cooked shrimp

    Method

    Wash and boil the rice till soft. Take off the heat and place in a bowl.

    Stir in the lemon juice, pepper and 1/2 the seasoning cube into the rice bowl and set aside.

    In a separate pot or pan, heat up the butter and fry the minced garlic. Toss in the shrimp and sauté for a minute.

    Sprinkle the rest of the seasoning cube in the pot with the shrimp and pour in your rice. Stir fry the rice for a minute and serve hot.

      I tried out your recipe and it was fantastic. Very easy to make. But I tweaked it just a lil bit by adding chopped habanero pepper cause I like peppery food.
      I gave my sis the recipe and she made it for a small birthday party she hosted in her house. It was a hit and she said no one touched the jollof rice.

      Saw your post on Instagram about toyin’s comment and decided to make this for my wife as a surprise. After a long day at work, she came home saying she was tired, first thing that hit her was the nice smell of the cooking and she loved the taste as well. Went for seconds… And I won’t tell you what happened later that night.
