Happy New Year my people. Hope this year has started off on a positive note for you all. I took a much needed break in the month of January from blogging to get inspired plus I switched cities again. I know I know, I roam around quite a bit. I also spent the past few weeks getting to know my new city Boston. It’s been quite an experience I tell you, positive though. Fast forward to February 1st, the weekend of the Super Bowl, I realized I needed to put something out before you all give up on me haha :). I had fun making these pineapple glazed turkey wings and they were super delicious. I had to tear myself away from eating them to blog about it quickly as the Super Bowl begins in a few hours. Hope you enjoy the recipe as much as I enjoyed eating it.
Recipe for Pineapple Glazed Turkey Wings
Ingredients
8 small pieces turkey wing pieces
9 small pineapple cubes
2 scotch bonnet peppers
2 cloves of garlic
A handful of chopped ginger
A handful of chopped onions
3 seasoning cubes
1/2 teaspoon curry powder
1/4 teaspoon thyme
2 tablespoon vegetable oil
Glaze Sauce
2.5 tablespoon of sugar
Left over from the marinade
1 teaspoon of oil
Method
Wash your turkey wing pieces and place in a bowl.
In a blender, blend your pineapple pieces, pepper and other ingredients including the seasoning and pour into the bowl with the turkey wings. Pour in the chopped onions.
If you have time, leave it to marinate for one hour.
In a pan (preferably non stick) place the turkey pieces in the pan to brown on both sides. Then transfer to a baking tray and coat with oil and place in an oven preheated to 350F.
Bake for 20-25 minutes or until completely cooked.
In a separate pan, heat the sugar and oil till it starts to brown (light brown), pour the left over marinade and stir in the turkey wing pieces.
Serve warm with a side of vegetables.
