On the menu today is Quinoa Salad. The holidays cannot go by without a recipe for the fitfam team. I mean what kind of food blogger would I be? The first time I had quinoa salad, it was at starbucks and it was very mexican inspired with the black beans and spicy dressing it was served with. I thoroughly enjoyed it and decided to make a different version for Christmas. I wanted a slightly sweet salad as everything I have made so far has been savoury. I want to believe by now all the fitfam pople in Lagos at least know where to get quinoa from. If by chance you are not one of those people, you can substitute with cous cous for this recipe.
Recipe for Quinoa Salad
Quinoa Salad
Ingredients
- 1/4 cup of Quinoa
- 1 green apple diced
- 1 celery stick diced (optional)
- 1 small red bell pepper decided
- 1 medium carrot stick shredded
- 1/4 cup of raisins
- 1/4 cup of chopped lean turkey sausage
- 2 tablespoons of coconut flakes
- 2 tablespoons of salad dressing ( I used balsamic vinegar)
Method
- In a pot of boiling water, pour in the already rinsed quinoa and boil for 5-7 minutes till soft.
- Place in a bowl and allow to cool or rinse with cold water and sieve to speed up the cooling process.
- Pour all your ingredients into the bowl and toss.
- Add your salad dressing and serve cool.
