• Over-Ripe Plantain and Shrimp Canapes

    What is a christmas menu when you don’t experiment with something and it turns out well? In this case my over-ripe plantain and shrimp canapes. Well let’s just say I was licking my plate after i photographed this one. It’s nothing super out of the blue but I had left over over-ripe plantain and wanted to try something different with it. There are many other recipes like mosa, dodo ikire,  and even plantain pizza that can come out of over-ripe plantain but I chose to make this one. Hope you enjoy it as much as I did.

    Over-Ripe Plantain and Shrimp Canapes

    Ingredients

    1 finger of over ripe plantain

    1 cup of flour

    2 chicken seasoning cubes

    1/2 cup of chopped shrimp

    1/2 cup of chopped bell peppers (red, green, yellow)

    3 tablespoons of vegetable oil

    1 large tomato

    1 scotch bonnet pepper

    1/4 bulb of onion

    Method

    In a bowl, peel and mash the plantain, sprinkle one seasoning cube and mix properly.

    Slowly incorporate the flour by pouring bit by bit into the plantain mix and mix properly till a dough is formed. Knead appropriately.

    Roll out the dough and cut into little circles (I used a glass cup)

    In a pan, pour 1 tablespoon of oil to grease the pan and place the plantain circles in the pan and bake in an oven for 15 minutes at 370 F. Make sure to turn on both sides to brown a bit and set aside.

    Blend or chop the tomato and scotch bonnet peppers with the onions and stir fry in the remaining oil, season with the chicken seasoning and stir in the shrimp for another 2 minutes on medium heat.

    Place the plantain circles on your serving plate, add the shrimp with the sauce as the topping and the bell peppers.

    Serve as is.
