Where do I begin apologizing from? I have behaved highly inappropriately for not posting as I should. The last few weeks have been a tad crazy but in a good way. I have been doing all kinds of random ajala travels. I graduated (yay) and I moved out of San Francisco 🙁 I swear I left my heart there. I absolutely love and miss that city. Everything was perfect; the weather, the people, the hills, the views, everything! I visited Toronto for a little while and spent time with family then I embarked on a trip to Nigeria for a bit for my best friend’s wedding and it was such an awesome time. Wedding planning is not easy o! I am so glad it all went amazingly well. I wish my darlings, The Thorpes a very happy married life. For those that follow Afrolems on Instagram, you would have seen that i posted a picture of my maid of honour Asoebi look. Well, for those that don’t follow afrolems on Instagram yet, here is the picture I posted. (Side note : after this picture came out, people kept saying I didn’t know Afrolems was run by a lady, hmmm I wonder why people thought otherwise)
Now on to the recipe for the day. I have to say this is still somewhat Kenyan inspired. They eat a whole lot of corn in Kenya. Everywhere I turned, there was corn or a corn dish. This dish was also inspired by my Indonesian friend who introduced me to this simple corn fritters appetizer at a restaurant. The version she introduced me to was crispier than this but I wanted something that felt more like a meal than an appetizer. I should have called the recipe corn cakes as opposed to fritters but oh well. Meanwhile, I have also always wondered, is corn a good dieting option as it can be both a vegetable and carbohydrate? Recipe for Suya Corn Fritters and Spicy Avocado
Ingredients (Serves 3 – 4 people)
1/2 cup corn kernels
1/4 cup of chopped beef suya pieces ( if you are vegetarian, this is optional)
1 chopped piece of spring onion
1/4 chopped green pepper
1/4 chopped red bell pepper
1 chopped small red scotch bonnet pepper (ata rodo)
1 chopped clove of garlic
1/2 chopped onion
1 Chicken seasoning cube
1 egg
1/2 cup flour
Salt to taste
Method
If you are using a whole corn, grate half of it and just scrape the rest of the corn pieces into the bowl. If like me, you are using canned corn, divide it into two and mash up half of it and mix it with the whole ones.
In a blender, or a little mortar, crush the garlic, onion and seasoning cube till it forms a paste.
Mix in with the corn and add the vegetables.
Whisk your egg separately and add to the bowl of corn and gently stir in the flour till it forms a paste.
Season with salt as necessary.
Stir in your chopped pieces of suya and set aside.
Heat up your oil, with a spoon, scoop the corn paste into the oil and flatten out in the oil to fry properly. Let it brown on both sides and serve with the spicy avocado paste.
Spicy Avocado
1/2 pieces avocado (mashed)
1 teaspoon of chilli flakes
Salt to Taste
Method
Mash the avocado till it forms a smooth paste and mix the chilli flakes and salt and serve with the corn fritters.
