• Coffee Cake

    Ever since my friend Sara baked a Coffee cake for our friend Bea’s birthday, I have been craving it badly. It just seems like the perfect indulgent breakfast with a cup of tea or even another cup of coffee. I was nervous about making it because I wasn’t sure how much coffee to put in the cake that would not make it bitter but still have the coffee flavour. Thankfully I figured it out on my first try. Yay me! Loving the improvements I am making thus far with this blog. A few short months ago, I would not have been venturing into baking at all but alas here I am diversifying my baking options. This is a simple cake recipe and hope you enjoy it.

    Recipe for Coffee Cake

    Ingredients

    1 cup of flour

    1 teaspoon of coffee

    1/2 cup melted butter

    1/2 cup sugar

    1 egg

    1.5 teaspoon vanilla

    1 teaspoon baking powder

    1/2 teaspoon salt

    1/2 cup of milk

    Method

    Cream your butter and sugar by whisking vigorously, incorporating air as you go.

    Slowly whisk in your egg and incorporate into the creamed butter.

    Pour in the vanilla and milk and mix for about 2 minutes.

    In a separate bowl, mix all your dry ingredients including the coffee and slowly pour in your wet ingredients into the bowl of the dry ingredients whilst mixing.

    Pre-heat your oven to 350F or medium-high depending on your oven.

    Grease your pan for baking and pour in your mixture into the pan. (If you plan on adding extra things to the recipe, like nuts or fruits, this would be the time to add them)

    Bake for 30-45 minutes. To check if the cake is ready, stick a toothpick in the middle and if it comes out dry, its ready.

    Leave to cool and garnish with your frosting and sprinkles.

    I also baked a vanilla cake to layer it. You can use the same recipe above without the coffee to achieve the vanilla cake.

      Wow..how nice.stumbled upon ur blog recently and I’ve been loving it ever since..keep up the good work.pls how did u make the white creamy stuff on top? I know its mostly on butter cakes but dunno how its made

        Hi Chidi,

        I’m so sorry. That was a typo. It is meant to be 1/2 cup of sugar. I would correct it now.

      Kudos to your good work and thanks for sharing, pls I have some questions how did u do the frosting creme?and the baking pan after greasing it,did u sprinkle some flour on it,?.

        Hello Chichi, I bought the already made frosting creme from the supermarket and for the greased pan, to be honest, i did not sprinkle flour on it, but you can 🙂
