Do you spell it plantain moi moi or plantain moin moin? I have always wondered what the correct spelling. If you know what it is, please leave it in the comments. So I have been staring at the over-ripe plantain in my kitchen and I really didn’t want to go the fried route of Mosa so I decided to go the steamed route. I would be experimenting more with over-ripe plantain recipes as food wastage is inexcusable. This recipe typically calls for unripe plantain flour but since I didn’t have that at home, I used regular all purpose flour. The unripe plantain flour is meant to balance the very sweet taste the over-ripe plantain has. Oh well, modify and keep it moving. This recipe serves 3 people with small portions. Recipe for Plantain Moin Moin
Ingredients (Serves about 3 people)
1 over-ripe plantain
3/4 cup of flour
1 cooking spoon palm oil
Handful of crayfish pieces (Or 2 tablespoons of crayfish powder for taste)
Handful of chopped onions
1/2 red bell pepper
1 yellow pepper (or red small pepper)
1 teaspoon salt
1/2 teaspoon of chilli powder
2 seasoning cubes
1/4 cup of water
Method
Peel and Blend the over ripe plantain with the bell pepper, yellow pepper, onions and water.
Pour mixture in a bowl, mix in the oil, salt, chilli powder, crayfish, seasoning cubes and flour.
Place in the foil container, ceramic bowl or banana leaves for steaming.
In a pot of boiling water, place your plantain moin moin to steam for about 20-25 minutes and serve warm.
P:S: Not using unripe plantain flour would mean this dish would be super sweet but it makes for an interesting flavour experience.
