Some of our fans requested this peppered fish dish and I stalled a bit because my nearby grocery store did not have any whole tilapia. They simply had the fillet of different types of fish so I went into china town and got some fresh fish. One of my mum’s cousins specializes in barbecued chicken, fish, goat meat etc. but I absolutely love his peppered grilled fish. The popular side dish for fish in Nigeria is cole slaw which he serves the fish with as well. I asked him for a recipe and he said he wouldn’t give me the quantities of his mix but he will tell me the ingredients to use and to be honest this was all I needed anyway. The recipe for this fish dish is relatively easy to make but to be honest it is way tastier when you have a proper grill. That way, you can burn it a little after all the taste of these things are really in the slightly burnt flavour the coal gives it. I only had my tiny oven so I decided to settle for an easy tilapia recipe baked in an oven with a combination of spices I can only assume is the right quantity. It was definitely tasty and I was stuffed by the time I was done. Hope you can savour the flavour.
Recipe for Peppered Fish
Ingredients
1 Large Tilapia
3- 5 yellow peppers (Depending on your preference, the more the better)
2-3 seasoning cubes
3 cloves of garlic
1/4 ginger
1 teaspoon chilli powder
1/2 teaspoon salt
2 tablespoons oil
2 tablespoons of water
1/4 red bell pepper
1/4 bulb of onion
Method
Blend all your spices and liquid ingredients together. Taste for salt and seasoning and add more if necessary.
Wear gloves and rub the blended mix all over the fish and set aside for 1-2 hours.
Preheat your oven to 370F and place the marinated fish in the oven and grill for 50 – 55 minutes.
Serve with cole slaw.
P:S: The banana leaves were for garnishing purposes but people say it adds to the flavour 🙂
