I had some friends over yesterday for dinner and before they got to my house, they warned me that they were watching their weight so they did not want anything super creamy or carb-heavy so I decided to make a few clean dishes. One of them was mango salsa. In Nigeria, Mango season usually starts February/March so I guess this dish is perfect timing. I have to say they thoroughly cleared their plates with all the dishes I made and some had just mango salsa with the yoghurt chicken i had on standby. The recipe for the yoghurt chicken will come later this week. For now, enjoy our mango salsa recipe.
Ingredients
2 Large Mangoes
1/2 red bell pepper
1/2 green bell pepper
a handful of cherry tomatoes
2 handfuls of chopped red onions
1 tablespoon of lime juice
A pinch of sugar
A few scent leaves or mint leaves
Method
Peel and chop your mango into small cubes
Cube your bell peppers and onions as well and mix in with the mangoes. Add the cherry tomatoes and mix in.
sprinkle your sugar and lime juice over it.
Chop your scent/mint leaves and mix in and refrigerate.
Serve cool as a side dish or if you want something refreshing on a hot day.
