• Coconut Cookies

    When I posted a collage of the dishes that didn’t make it to the blog last year, the first requested recipe was the coconut cookies one. To be honest, I was a little surprised as that was the last one i thought people would ask for. Not sure why i thought that. I really did love making it and it quickly disappeared when i took it to my friends. If you are diabetic, I suggest you run far away from this one as the sugar is a little overwhelming. It is perfect for kids or people that have a sweet tooth. It is very easy to make and has a soft and chewy cookie texture. You would not be needing a mixer for this and it is a great work out for your arm when whisking the egg *wink wink* Enjoy the Afrolems offering of our coconut cookies.

    Recipe for Coconut Cookies

    Ingredients

    2 cups of coconut flakes

    1 cup flour

    2 eggs

    1/2 stick of butter (50 g of butter) – melted

    1/2 cup sugar

    Method

    Whisk the eggs and sugar till its a light yellow colour and incorporate air as you mix. (This is your arm workout for the day lol)

    Melt the butter and pour into the egg mix and continue to whisk.

    Mix in the coconut flakes and then the flour.

    Heat the oven to 345 F or 175 C. If you do not have specific measurement on your oven, just use your discretion to adjust to medium heat.

    Then with your hand, scoop your cookie dough onto a greased pan or parchment paper if you have and bake for 20-25 mins.

    Note: The cookie dough would be soft when you have mixed it but would solidify once its baked. Remember also that this is a soft chewy cookie.

    Serve with tea or any beverage of your choice.

      Please do you know a way I can improvise to make cookies even if I don’t have an oven?

        unfortunately, I am not sure when it comes to cookies if it was a beef or chicken i would have suggested an open fire grill but you can put the cookies on a cookie sheet and try an open fire grill but I can’t guarantee

        Yes y can improvice.
        Just put a pot on a stove and heat up then u can put your baking tray with your cookies or cake in it and cover the pot.then make sure u check it and control the heat from the stove so your cookie or cake doesn’t get burnt.

      Pls, how long can the cookies be preservd, and can one produce it in large quantity for commercial purpose? Pls your advice is needed. Thanks

        Hello Jojo, I imagine the cookies can be kept in an airtight container maximum one week or in the fridge slightly longer but the recipe wasn’t designed to be made commercially
