• Nigerian Fish Pie Recipe

    I have had many failed baking attempts. Especially with the dough part of things. I even somewhat goofed in this recipe but it was a good goof so I decided to share with you all. A few months ago i tried making Nigerian fish pie and it came out not so great. The crust was too hard and extremely dense and not in a good way. I have learnt and grown so far so yay. The mistake in this recipe was dumping the egg in the dough, I initially intended on trying it without the egg but the egg addition did not produce a terrible result. The other mistake I have made in the past is over kneading the dough. Once the dough holds, place in the fridge. Do not overwork it. Do you have baking mistakes? What are your learnings from them?     Nigerian Fish Pie

    Ingredients

    1.5 cups of all purpose flour

    1/2 teaspoon of salt

    1/2 teaspoon of baking powder

    1/2 cup of butter

    1 egg (once whisked, divide in half, leave half for coating and I added the other half to the dough. Feel free to skip adding it to the dough)

    1/2 cup of water

    A can of sardines

    Method

    Melt the butter and work into the flour till properly mixed. Add the baking powder and salt and continue working it in.

    *optional step* Add half of the whisked egg to the flour and mix.

    Slowly pour the water and mix and knead the dough. Do not pour all the water at once. Add it step by step so the dough can hold. Do not over work the dough. Once you have kneaded it sufficiently, wrap in a plastic wrap and place in the fridge for 1- 2 hours so the dough can be smoother.

    Take out the sardines from the can and mash. Feel free to add anything you like like chopped onions or peppers. I made mine plain.

    Pre-heat the oven to 350F.

    Once the dough is smoother, sprinkle some flour on the surface you would be rolling the dough on and roll out your dough.

    Place a small portion of the mashed fish on the dough and roll. I had fun with mine and got cookie cutters to make different shapes. The standard way of doing this is to cut the dough into squares and roll.

    Once you have laid out your fish pies on a greased pan, use the rest of the whisked egg to coat the dough by rubbing the egg on them. This gives it that finished brownish look.

    Place in the oven for about 25-30 mins.

    Serve your nigerian fish pie with a cool drink.

      Oh! I’m not alone in this baking wahala, sometimes I add too much water or butter or I over knead… Any how, there’s always someone to eat the finished product! I’ll definitely try this…

      pls I want to b sure of d kind of cup used for d measurement. is it peak milk cup or???? tnx

        I use the american standard of measurement for cups. I do 125 grams as 1 cup. I am not sure how many grams a peak milk cup is

      Dear Afrolems, i have 2kids of ages 4(boy) and 2(girl). I dnt knw if its hard for them to chew or swallow wen it comes to food. I’ll ask dem w@ dey wnt, n ll get it 4 dem. V tried asking dem b4 preparing anythg, v visited a nutritionist, got dem Bcomplx, infact got dem phamaton kiddie, it all NO. Pls w@ can u help me with d@ ll chng my story 4 better. Any tasty, good, balanced diet 4kids?

        Hello Rohil,with kids, it is always complex trying to plan meals for them if they are not particularly interested in anything. It takes a whole lot of effort. What my mum used to do was she picked the dishes we liked and infused nutrients into those dishes. For example, we never ate indomie plain, it had to be with protein and vegetables. Instead of soft drinks all the time, she blended fruits and we liked it. In stew, she would occasionally stir in vegetables. She even moulded our eba into fun shapes just to get us to eat it. It was fun eating it at that point.         This may have a lot to do with the dough handling. Did you allow the dough rest and did you roll it too thin?
