So I have a couple of foodie crushes and I have been chasing them down for guest posts 🙂 so I would be sharing them with you. One of my favourite foodies is Greedygirlcooks. I discovered her on Instagram and immediately fell in love with her page. Her pictures are amazing and she has said several times that there are many similar recipes between the Nigerian and Jamaican cuisine. She gave an example of Nkwobi being a similar recipe that Jamaicans and Nigerians share except Jamaicans obviously don’t call it Nkwobi. Enjoy her version of Jamaican Jerk Chicken.

Jamaican Jerk Chicken.
The only place you can get real authentically prepared jerk chicken is at a jerk spot on the road side in Jamaica or in the country at your grandma’s house (if she has an outdoor kitchen). Why? Because authentic jerk chicken is not cooked on a metal wire grill over coals, it’s cooked on top of green wood, as in the chicken lays directly on the wood and the wood above the coals. Then they cover the whole thing with a large meal sheet where the sides are open. This is cooked at lower flames for a long time, the burning of the wood imparts flavor onto the chicken and you end up with really juicy tender chicken. It’s served with ketchup & scotch bonnet sauce on the side and hard dough bread. Nowadays everyone has modern grill pans and ovens so home cooks do not use the green wood in making jerk chicken. You can however achieve the same flavor at home with good seasoning and a grill to oven method I used to get really tender Smokey chicken.
Ingredients:
Chicken seasoning:
16 pc chicken parts
2 tbsp oil
3 tsp. soy sauce
3t tsp. no salt seasoning
3 tsp. all spice
1 tsp. salt
1 tsp. chopped scotch bonnet pepper
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. thyme leaves
1tsp. ginger powder
1 tsp. black pepper
1 tsp. smoked paprika
BBQ sauce:
1 cup ketchup
1/3 cup sugar
ÂĽ cup molasses
½ cup honey
1 tsp. all spice
1 tsp. salt
1 tsp. smoked paprika
1 tsp. cayenne pepper
