• Banana Bread Recipe

    For those that have been following my blog for a while, you would know that I claim not to be able to bake to save my life. Well this banana bread post is breaking that myth and it’s giving me confidence to try my hands at baking more often. I really had fun with fingers crossed hoping it would work out and it did. It came out super delicious and moist which is what I guess it is supposed to be. Either way I really enjoyed it. You can add several things to this basic recipe like walnuts, currants, or even chocolate chips. Have fun with it.     Recipe for Banana Bread

    Ingredients

    4.5 tablespoons of butter, softened

    2 ripe bananas

    2 eggs

    2/3 cup of sugar

    a pinch of salt

    1 1/3 cup all-purpose flour

    1/2 teaspoon baking soda

    1/4 teaspoon baking powder

    Method

    Mash the bananas till it’s smooth.

    Whisk the eggs and set aside.

    Mix all your dry ingredients except the sugar and set aside

    Mix the butter, egg and sugar and cream it. Add the mashed bananas to this mixture and mix till smooth.

    Pour the wet ingredients to the bowl of the dry ingredients and mix thoroughly till smooth incorporating air as you mix.

    Pre-Heat the oven to 375F, grease the pan and pour in your mixture and place in the oven. It should take roughly 25-30 minutes to bake fully. To make sure it’s ready, stick a toothpick in it and if the toothpick comes out clear you are good to go. Allow to cool for a bit and serve πŸ™‚

    P.S: If you would be adding walnuts, currants or chocolate chips, add it to the mixture before pouring it into the pan while you are incorporating air.

      interesting recipe. I love bananas. Question: does the finished product have a moist soft middle? or is it as hard as the bread?

      THIS IS THE BEST BANANA BREAD I HAVE MADE I TO DID THE MAYO ALSO I DO IT WHENEVER I MAKE CHOCOLATE CAKE. THE BREAD WAS WAS EXCELLENT!!

        Hello Joan, it’s not ignorance at all. A microwave oven can be used but It may require less time to bake and the bowl you bake it in must be microwave compatible. I do not know what the texture would be like as I have never done it but it should work.

      Is this real butter? or margrine? because here we often interchange the two, so I would like to know if it is interchangeable in this recipe?

        Hello Adaora, I actually used butter in this recipe. You can use margarine, it doesn’t affect the texture significantly but it won’t be the exact same texture as pictured. It would still be yummy though.

      Made this a couple months ago I had ripe bananas and thought why not give it a try. However I had no more butter and used oil instead πŸ™ˆand I don’t like the banana texture so I blended the bannan’s instead πŸ™ˆ. It came out nice and moist it was all gone within minutes, my dad even had some and he doesn’t like cake. Sorry for the long coment 😁 its fathers day tomorrow and I will be making this again but following the your recipe this time, I have butter at home πŸ˜„

        Oil is a substitute for butter. I use it sometimes. Texture and taste is slightly different and sometimes not even noticeable depending on what you are making. Thank you for trying out this recipe. I love long comments so please leave more πŸ™‚ Hope your dad enjoys the banana bread πŸ™‚

        Hello Gift, it’s because the heat has no moisture whatsoever. If you put your mix in a pot and cover it then put a metal bowl of water on top of the cover before covering the pot, that might help retain the moisture and make your cake not so hard.
