Happy Valentine’s day everyone. Hope your day has been filled with yummy treats and good food and chocolates. For people that do not have a significant other this valentine’s day, try to make the most of it with your friends. Remember it is about showing love 🙂 #doneranting Now we have a unique recipe from one of our Afrolems chefs for our last day in this series. It is the Quinoa Lettuce wrap. Hope you enjoy it.
Chef: This is one snack i really enjoyed making. It was fast and really simple. Goes a long way when you need to make a quick valentines day appetizer!
Quinoa Lettuce Wrap
1½ Cups of Quinoa
½ Red Bell pepper
½ Yellow Bell pepper
1 small red onion
1 large mushroom
2 Tablespoons of virgin olive oil
1 pinch of salt to taste
1 cube of knorr or Maggi seasoning
¼ teaspoon of dry red pepper
1 small iceberg lettuce
1cup of spinach
Instructions
Peel and rinse iceberg lettuce, set aside to dry
Rinse spinach and set aside to dry
Wash and dice all vegetables, set aside
Bring 2 cups of water to a rapid boil on medium –high heat, gently pour quinoa into pot and boil for 12 minutes. Drain and set aside to cool.
In a non-stick pan, pour olive oil and let heat up for 1-2minutes on medium heat
Pour in diced vegetables and stir fry for 2minutes
Add in seasonings and stir on medium-low heat for 1minute.
Gently pour in quinoa one spoonful at a time and stir-fry until quinoa is fully coated with vegetables. Add in 3 tablespoons of water.
Let cook and sir-fry continuously for 2 minutes on low heat.
Set pan aside and let cool.
Gently place the lettuce leaves in a plate and pour in quinoa.
Serve and enjoy with dipping sauce of your choice (spicy sweet and sour sauce shown in picture).
Serves one.
