• How to Make Suya Pepper Spice

    “Abeg Mallam give me suya with gizzard, kidney, onions and tomato with one bitter lemon” This is the type of conversation you hear between a customer trying to place an order and a Suya Spot owner in Nigeria. If you have ever tried Suya, you will know that it is one of the best things that ever happened to grilled beef or lamb or goat or chicken. I would suggest Suya for those going on a strict protein diet. The spice gets you drinking lots of water and before you know it, you are full. What also makes Suya so unique, is the spice used to make it. I have never known the name but all I know is its called “Suya Pepper.” You could also use this spice for other dishes for a little more flavour. I sometimes use it in my Asun or Jollof Rice. It adds a distinct flavour to it. The recipe is available below.
    Ingredients
    • 2.5 teaspoons finely grounded roasted peanuts
    • 1 teaspoon dry pepper or cayenne pepper or chilli pepper flakes (ground)
    • 1 teaspoon paprika
    • 1/2 teaspoon ground ginger
    • 1/2 teaspoon garlic powder
    • 1/2 teaspoon onion powder
    • 1 teaspoon of salt
    • 1 cube of Maggi

    Method

    Grind Roasted peanuts ( Using a paper towel, press your blended peanuts in the paper towel to take away the excess oil)

    Add grounded pepper(dry pepper), paprika, ground ginger, garlic and onion powder and salt to the bowl of grounded peanuts.

    Mix ingredients together and you have your Suya spice.

      how does one ground the roasted peanuts without oil coming out and making it look wet and sticky.

        You could squeeze the peanuts in paper towel to take out the excess oil

        I am not certain as kuli kuli is very solid and would require a lot more work to crush but it can certainly be used if you are ready to put in the work of crushing it into fine powder
