Dundu is a Nigerian recipe that is specific to the Yoruba tribe. I have spoken to many people asking how to make it in different ways and I have heard people use plantain, coco yam, sweet potatoes and yam. I have chosen to use Yam for mine and I will serve my Dundu with spicy shrimp sauce. Yam is rich in Carbohydrates and should be consumed with caution. Its all about portion control. Ingredients
3 slices yam
1 tomato
3 shrimps
1 clove Garlic
1/2 bulb Small Onion
1/2 Bell pepper
1 egg
3 cups of water
2 cooking spoons of palm oil
1 tablespoon butter
2 teaspoons of salt
1 cube of Maggi
1 teaspoon of dry pepper
1/2 teaspoon curry
A pinch of Thyme
Method
Peel and Cut Yam
Soak yam in water with 1 spoon of salt for 5 minutes
Heat oven to 350 F, drain water from yam and place in a baking tray and place in oven and bake for 10 minutes.
Chop vegetables, Heat up the butter, stir in vegetables, seasoning and shrimp. Cook for about 5 minutes on medium heat.
Heat up palm oil, deep the yam in the whisked egg and fry in the palm oil till golden brown.
Serve with Shrimp Sauce.
